Can I capture the piece UNDER where my erupted piece lands?
No
Whenever an erupting piece lands upon a piece of its same size, you capture the erupting piece.
Can I ever lose captured pieces?
Only via Power Play
You may voluntarily choose to give up one of your previously captured pieces and put it back on the board.
They cannot be stolen or destroyed by another player.

Caps (and erupting pieces) can be moved into any empty space, including the space in the center (called the Caldera) which only remains empty until a piece erupts into it. Of course you won't capture the piece which landed in the empty space, since it did not land on a piece of the same size.

Your turn ends when you cause an eruption of any kind, even if you fail to capture any pieces.
How many times can I move caps?
You can move any number of Caps any number of times, as long as nothing erupts.
Can I stack larger pyramids on top of smaller ones?
Yes
But you may never stack anything on top of a Cap.
