Yes
A stack of tokens can become fully depleted, but note that the last 3 tokens can only be taken with the action: "Take 3 gem tokens of different colors."

The Gems that are acquired through development tiles aren't counted towards the maximum limit of 10 tokens.

No
You aren't allowed to have more than 3 cards reserved and you can not discard them either.

How do Gold tokens work?
Gold tokens act as jokers, so when you're buying a Development Card, you can replace any Gem with a Gold token.

How do I get gold tokens?
The only way to get gold tokens is reserving a card. When ever you reserve a card, you also get a gold token if they are available.

Can I take gold instead of gems on my turn?
Can I still get visit from a Noble on the last turn of the game after another player already has 15 prestige points?

Yes
As long as you don't exceed the maximum of three cards reserved at one time.

Yes
But only once per turn. A visit from a Noble doesn't count as an action.

I can't take the three tokens and since the two remaining stacks are less than four tokens high, what do I do?
The action "take three different tokens" allows you to pick only two different tokens, or even one, if all the other piles are depleted. So take as many as you can and are allowed.
